If you’ve watched our video (watch it again below) and fancy making some Rubies in the Rubble vegan mayo yourself, look no further. Our friends at Rubies in the Rubble have kindly given us their secret recipe for you to make at home.
Like all the brand’s products, it makes use of ingredients that would otherwise be thrown away. In this instance, the mayo is made with aquafaba, the protein-rich water left over from cooking chickpeas which would otherwise be thrown away. Rubies in the Rubble works with hummus manufacturers to source its aquafaba, but you can find your own by draining a can of chickpeas. The Rubies in the Rubble aquafaba mayo is also egg-free, making it suitable for vegans.
Rubies in the Rubble Aquafaba Mayo
Ingredients • 235 ml sunflower or rapeseed oil • 78 ml aquafaba (aquafaba is the water that comes with canned chickpeas) • 1 tbsp dijon mustard • 1 tbsp apple cider vinegar • 0.25 tsp salt
Method • Combine all the ingredients but the oil in a jar. Begin pulsing together with an immersion blender. • While blending, slowly add in the oil. Lift up the immersion blender slightly as you are mixing to help incorporate air. • Your mayo will begin to thicken after a few minutes. Add oil gradually as you go to create the perfect, smooth mayo consistency. • Enjoy your food waste fighting mayo with anything you fancy!
Top tips • It’s best to use a tight container or jar when mixing this mayo (depending on how big a batch of mayo you’re making.) If your container is too big the mayo won’t emulsify. • Be patient- it can take some time for the magic to happen! Add the oil in very slowly!
